For the mutton:
1 kg boneless mutton pieces (leg or shoulder)
1 large onion, finely chopped
2 cloves of garlic, minced
1 tablespoon ginger paste
1 teaspoon cumin powder

1 teaspoon red chili powder
Salt, to taste
2 tablespoons lemon juice
2 tablespoons ghee or oil
For the biryani:
1cup basmati rice
4cups water
1 tablespoon ghee or oil
1 teaspoon cumin seeds
1 teaspoon cardamom powder
1 teaspoon rose water (optional)

Instructions:
Step 1: Marinate the Mutton
In a large bowl, combine the chopped onion, minced garlic, ginger paste, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and lemon juice.
Mix well to form a smooth paste. Add the lamb pieces and mix until evenly coated with the marinade.
Cover and refrigerate for 30 minutes or overnight.
Step 2: Fry the lamb
Heat 2 tablespoons oil or ghee in a large skillet over medium heat.
Remove the lamb from the marinade and place in the pan. Cook till all sides of the chives are browned and cooked. Remove from heat and set aside.
Step 3: Prepare Biryani
Wash basmati rice and soak in water for 30 minutes.
Drain the water and keep the rice aside. Combine the rice and water in a large pot. Bring to a boil over high heat, reduce heat and simmer for 15 to 20 minutes or until the rice is cooked and bubbly. Drain the water and keep the rice aside.
Step 4: Make biryani.
Add the cumin and let it splutter for a few seconds. Add the cooked lamb and stir in the cumin.
Then put a layer of cooked rice on top of the meat. Sprinkle salt, cardamom powder and rose water (if using). Repeat until all the ingredients are used up and end with a layer of rice.
Step 5: Pour
Cover the pot with a tight fitting lid and simmer for 10-15 minutes on low heat. This means that when the spices mix together, the rice absorbs all the sweet juices.
When done, remove from heat and let rest for 10 minutes before serving. Garnish with fresh chopped coriander and serve hot.
