Chicken Pulao Recipe
Ingredients:
1 cup basmati rice
* 250 chicken, cut into pieces
* 1 large onion, sliced finely
* 2 tomatoes, diced
-2 green chilies, slit open
* 1 cup plain yogurt
* 2 tablespoons ginger-garlic paste
* 1 turmeric powder
* 1 teaspoon red chili powder
* 1 cumin seeds
* 1 garam masala
* 1 teaspoon coriander powder
* 4-5 cloves
* 2-3 green cardamom pods
* 1 bay leaf
* 1 stick of cinnamon
* 1/4 cup fresh coriander leaves, chopped
* 1/4 cup fresh mint leaves, chopped
* 2 tablespoons cooking oil or ghee
* Salt to taste
* 2 cups water
**Instructions:**
1. **Prepare Rice:**
* First, wash the basmati rice with cold water. Keep rinsing until the water is clear.
* Soak the rice for about thirty minutes, then drain it well & set it aside.
2. **Cook Chicken:**
* Heat oil or ghee in a large pan, or a pressure cooker over medium heat.
* Add cumin seeds, cloves, cardamom pods, bay leaf, & a stick of cinnamon. Sauté for a minute till you smell their aroma.
* Next, put in your sliced onions. Cook them until they’re golden brown.
* Then add the ginger-garlic paste & let it cook for two minutes.
* Toss in the chicken pieces; cook them until they begin to brown.
3. **Add Spices:**
* Now it’s time to mix in turmeric powder, red chili powder, coriander powder, and salt.
* Stir in your chopped tomatoes. Keep cooking until they soften—just a few minutes should do.
* Finally, add the yogurt and let it cook for about five minutes until the chicken is fully cooked and all spices blend well.
4. **Prepare Pulao:**
* Add the drained rice into the pan; mix gently so that it combines with chicken & spices evenly.
* Pour in the two cups of water and bring everything to a boil.
* Lower the heat and cover it up. Let it simmer for around fifteen to twenty minutes or until rice is tender & water is absorbed.
* When finished cooking, remove from heat but leave covered for five more minutes.
5. **Finish and Serve:**
* Fluff up the rice using a fork; stir in chopped coriander & mint leaves.
* Serve your Chicken Pulao hot with raita, salad or any side dish you like!
